Cold Brew Coffee Cake 

A twist on your traditional coffee cake, but this time with cold brew coffee actually included! 


  • 1 cup of butter, softened
  • 1 cup granulated sugar
  • ⅔ cup brown sugar
  • 3 eggs
  • 1 tbsp vanilla extract
  • ¾ cup sour cream
  • 1 tsp salt
  • 3 tsp baking powder
  • 1 cup milk
  • ¼ cup cold brew concentrate
  • 3 ⅓ cup flour
Cinnamon Filling
  • ⅔  cup brown sugar
  • ⅔ cup flour
  • 3 tsp cinnamon
  • ½ tsp nutmeg
Crumb Topping
  • 1 stick of butter, softened
  • ¾ cup brown sugar
  • ½ cup flour
  • 2 tbsp cinnamon



Step - by - Step Instructions

  1. Preheat oven to 350℉. Prep a 9×13 baking dish and coat with nonstick spray.
  2. Prepare cinnamon filling. In a bowl, combine ⅔ cup brown sugar, ⅔ cup flour, 3 tsp cinnamon, and ½ tsp nutmeg. Whisk together and set aside.
  3. In another bowl, mix 1 cup softened butter, 1 cup granulated sugar, ⅔ cup brown sugar. Mix until light and fluffy.
  4. In the same bowl, add in the eggs, 1 tbsp vanilla extract, ¾ cup sour cream, 1 tsp salt, and 3 tsp baking powder. Combine until fully incorporated and smooth.
  5. Mix in cold brew concentrate.
  6. Slowly add in flour and milk, alternating the two until all ingredients have been combined.
  7. Spread half of the cake batter into your baking dish.
  8. Sprinkle your cinnamon filling all over the cake batter and pour the remaining batter on top.
  9. In a separate bowl, combine the stick of softened butter, ¾ cup of brown sugar, ⅔  cup of flour, and 2 tbsp cinnamon. Mix until the mixture creates a crumb like texture. (If it’s a little melted, that’s okay too! It will crisp up in the oven)
  10. Evenly sprinkle the crumb topping on top of your cake batter.
  11. Bake for 40 - 45 minutes and enjoy :)
